Chardonnay Egg‑Fermented 2024 is a distinctly terroir‑focused white wine made from 100% Chardonnay grapes from vineyards around Nikolaevo in Bulgaria’s Thracian Valley, fermented in egg-shaped concrete fermenters that provide natural batonnage and enrich the texture without oak. Vinification without oak influence allows the true characteristics of the variety—freshness, citrus notes, and minerality—to shine.
The nose is dominated by ripe citrus fruits, tropical fruit, and subtle green fruit, while on the palate, the wine leaves a juicy, harmonious, and mineral profile with a long finish typical of the “egg-fermented” style. Thanks to fermentation and aging in concrete eggs, the structure is compact yet elegant, with balanced freshness and aromatic depth.
This Chardonnay is a versatile wine for gastronomic pairing, excellent with fish, shellfish, chicken, and creamy cheeses, with aging potential over the next 2–4 years when its aromatic notes and balance are best expressed.
