Makaridze Dondghlabi 2025 is made from 100% Dondghlabi, a rare indigenous Georgian variety typical of Imereti. The grapes come from vineyards around Terjola, with Dondghlabi vines planted as far back as 1971, at an altitude of around 150 m.
The wine is made by the traditional qvevri method, in Georgian clay vessels, with minimal intervention. According to the available technical notes for this label, it undergoes nine months of ageing in qvevri without maceration. The style is defined by pronounced freshness, higher acidity, and minerality, with a lighter body and complex fruity, earthy, and yeasty tones.
Pairs beautifully with lean fish, poultry, mushrooms, vegetarian dishes, and mild cheeses.
